Giglio
In case anyone is interested (and this may be old news) about a month ago I stumbled across OpenCore Hackintoshes. https://dortania.github.io/OpenCore-Install-Guide/ I followed a couple guides and installed macOS Monterey on an old Lenovo T450. Having used other hackintosh approaches in the past (clover, catalina patcher, i think and others going way back) I am amazed how well it works. The only thing that I have found that doesn't work is some DRM based iTunes movies. Anyway, if you have hardware around and want to build it into a "Mac", check out OpenCore.

habitual
Not quite a hackintosh, but for testing mac stuff, I end up using this project. A pretty slick container for MacOS https://github.com/sickcodes/Docker-OSX

crankysysadmin
I have nothing but good things to say about OpenCore Legacy Patcher. Currently running Monterey on my 2013 MacBook Air. Big Sur was absolutely sluggish to the point of being unusable and now It's like a brand new machine.
